11 Facts about ME:

  1. I love to sing & dance, although I’m not good at dancing
  2. I love playing tennis for fun
  3. I play guitar
  4. I have a 6 week old baby boy who was just diagnosed with cystic fibrosis.
  5. I would buy every subscription box in the market if I had the money. I’m an addict!
  6. My favorite band is The Beatles but I like tons of stuff. I’m into Mo and Sarah Jaffe at the moment.
  7. I can do a back bend and move my ears
  8. I’m a goo hoarder. 🙂
  9. I worked at a gas station for 4 years, just quit and couldn’t be happier with my decision.
  10. My husband is my best friend and has saved me from myself more times than I wanna admit.
  11. I’m blunt. I don’t beat around the bush so if you don’t want to hear the truth don’t ask.

  1. What is the thing you love the most about yourself? My face because it’s beautiful

  3. Your biggest fear? Getting a roach stuck in my ear. I saw it on ER when I was a kid and ever since I’ve been scared to death of it happening to me. Ahhh!
  4. What do you love most about makeup? I love how pretty it makes me feel when I’m not feeling too great.

  6. Would you rather go outside without your brows done or with an overload of blush on your face? Without my brows done. Too much blush is the worst!
  7. When did you start wearing makeup? 7th grade I started wearing eyeliner and maskara
  8. What are your hobbies? Singing, organizing, reviewing products, hiking,cooking tennis and guitar.

  11. What do you do currently (job, study)? I’m a stay at home mom right now. I went from working 50 hours to staying at home. It’s really nice to be able to stay home.

Dinner of the Day!

-Hatch Chile and Red Pepper Chicken Enchiladas

-Mexican Oregano & Asiago cheese Hasselback potatoes, Romanesco & Califlower

-Homemade Chocolate Chip Cookies for dessert

DOTD32816Having a good family meal used to be so important in our culture. It was a time to sit down relax,enjoy a homemade meal and catch up with our family members. Now that the world seems to get busier and busier it seems we never have time for it. A lot of people just grab fast food and don’t think twice. Not only is fast food horrible, chemical filled crap but its taking away our ability to learn how to cook and spend time with our loved ones or one.

Now that I’m a stay at home mom, I feel its my duty to make yummy healthy meals for my family each night. I always make a dinner but I don’t normally put much effort into it but starting now, I am. I have a baby boy that’s gonna be eating real food one day so I need to learn to cook for his sake!  That’s why I’m starting my Dinner of the Day Series! Here Goes!


Hatch Chile Chicken Enchiladas Recipe


1 crockpot

1 lb Chicken breasts or strips

1 packet fajita seasoning of your choice

1 quarter yellow onion

2 cloves garlic

1/2 Red Bell Pepper

1 fresh Jalapeno thinly sliced or canned if preferred (optional)

12 Corn Tortillas

Extra Virgin olive oil to cook tortillas in

1 cup grated mexican blend cheese

Hatch Chile Salsa (I use 505 Southwestern Flame Roasted Green Chile Pictured below)

This stuff is great! Just 4 ingredients no chemicals and fillers

-Throw the first 5 ingredients into your crock-pot with the amount of water specified by your fajita seasoning packet. You can chop the veggies to your preference. I like to julienne the red bell pepper so I can top off the enchiladas with them. Cook on low for 4 hours.

-Preheat Oven to 400

-After the chicken has cooked, fry your tortillas in EVOO (just enough oil to soften your tortillas to make them roll easily)

-Set up your assembly line. You can have family help if you’d like. Set out your tortillas first, then 1/2 cup cheese, then your crock pot chicken crumbled (just wash your hands and crumble the chicken on a cutting board) and lastly your casserole dish of choice.

-First Pour about 1/2 cup of the juice left over in your crock pot into your casserole dish.

-Next fill each tortilla with chicken and cheese, roll and place into casserole dish, repeat with all 12 tortillas.

-Top with remaining 1/2 cup cheese

-Top with a layer of Hatch Chile salsa

-Top with Red bell pepper strips from crock-pot and pour remaining juice on top of enchiladas.

-If you like it spicy, thinly slice a Jalapeno and place on top of enchiladas, canned is fine too.

-Bake for 10-15 min

-Let cool 5 min

Ready to Serve!

Mexican Oregano & Asiago Hasselback Potatoes, Romanesco and Califlower.


-1 TB Mexican Oregano

-2 tablespoons grated Asiago Cheese

-Salt and pepper to taste

-Garlic Powder

-Extra Virgin Olive Oil

-Small Creamer Potatoes

-1/2 cup Romanesco

-1/2 Cup Califlower


-Preheat oven to 400

-Cut potatoes like you are slicing them but don’t cut all the way to the bottom, cut till you almost hit the bottom.

– Put your veggies and potatoes in a dark baking dish.

– Sprinkle the first 4 ingredients on top and toss in EVOO

-Place foil on top of pan and bake at 400 for 30 min

-Let cool 10 minutes

Ready to Serve!

Walmart Beauty Box Spring 2016

Walmart Beauty Box Spring 2016 First Impressions

I just got my Walmart Beauty box for this spring!

The cost of this box is just $5 per season and the box is always valued at more than $5 so it’s totally worth it. It’s so nice to get a surprise in the mail. You never know whats gonna be in it.



This box is STUFFED! As soon as I opened it I knew It was gonna be good!

The first thing I went in for was the Colgate Optic white toothpaste.

It clams to make teeth whiter in just 3 days-we’ll see about that!(I’ll comeback here and update you after I’ve tried it for 3 days) I’m exited to try it.



excuse the pajamas, I didn’t feel like getting dressed. Who dresses up to open a box anyways? I’m just being real here.

Next up is a sample of John Frieda brilliant brunette subtle lightening shampoo. It is supposed to visibly brighten brunette hair. Its a pretty generous size sample and would be great to take on a trip. I’ll be giving it to a brunette friend as my hair is blonde.


The next product in this box is a sample of Cera Ve Healing ointment. I’ve never heard of this so I don’t know what to expect. It looks and feels much like Neosporin. It will be great to have on hand for cuts and scrapes. (I’m pretty clumsy)


This next item is something that I already purchase regularly. It’s one of my must haves. It is a travel size of Jergens Natural Glow Daily Moisturizer in the color fair to medium. I use this self tanner to give myself just a little bit of color as I’m against tanning beds or laying out. I use it sparingly as the ingredients are questionable. I have sensitive skin so I try not to over use any products but I’ve never had a reaction from it. I’ve tried alot of self tanners and this one gets the biggest bang for your buck.


The next item is something that my husband and I could both use. Its Curel Itch Defense Body wash. We both are prone to dry, itchy skin so we have to be careful with our body wash. I can’t wait for us to try this. It would be a miracle to find something that works for both of us!


Now we have the Biore Baking Soda Pore cleanser. I’ve been using the Biore Ice cleanser as my main face cleanser since I was in high school to stop breakouts. Now the ice cleanser is starting to dry out my skin too much so maybe I will like this one better.  



I usually cannot stand getting packet samples but the ones I got in this box were pretty nice. I got a sample of Berts Bees BB Cream which I’ve been wanting to try. It comes with a $3 off coupon so If me likey me buyey! There’s a packet sample of Neutrogena Oil free Acne correct and cover. I’m guessing that its a CC cream? It also comes with a coupon for $1 off. I’ve been wanting to try new BB creams so it will be nice to try these. There is a sample of Loreal Paris Age Perfect Glow Renewal Facial oil-dang what a mouthful! Yet another thing I would actually like to try. Next there is a True Match card with a $1 coupon. The card has stickers you can match to your skin color to find the best match in the Loreal True Match foundation collection.

My box came with a sample of the new Vera Wang Embrace Perfume. It smells sweet and light. I could live off the perfume samples I’ve gotten in my lifetime but I’m always up for more. I keep them in a jar in my guest room and let anyone take one.


and last but not least, my favorite item in the box….

The Neutrogena Moisture Smooth Color stick! 

I’m exited about this because I never buy lip color products and I’m starting to want to start trying out lipsticks.


Overall I really love this box! I would value it at around $15 not including the coupons!
